Teatime Roulette - Mexican Lasagne

My kids are pretty good eaters. It's not fashionable, I know and probably sounds pretty smug, but there we go. It sometimes means that I am less forgiving of the food foibles of other children. On the other hand, when you've got friends for tea, you want to make sure they eat something. It sometimes feels a litte like playing roulette.

I was pretty desperate on Monday night, with extra kids to feed, no plan, and no left over roast dinner to fry up with some noodles and pass off as stir fry. Instead, I had to throw myself on the mercy of the veg patch, the cupboards and the freezer.

We have loads of tomatoes still coming and mostly ripening, and, thanks to the Husband's kidney bean free birthday chilli, several cans of red kidney beans more than will fit in the cupboard. Tortilla wraps in the freezer, and a vague memory of a Nigella recipe in my head.

As it turns out, it wasn't such a bad combination. Minimal fuss, with maximum result: I was fairly sure my kids would eat it, not so sure about their friends, but do you know, they all loved it. With toffee apple squares to finish, it may be a perfect post-school tea. Or may be not. The kids loved it so much there was barely enough left over for the Husband and I...



Bear in mind that you need quite a tight fit dish or tin for layering this up in. I found that a 20cm round cake tin worked well, although I had to raise the sides by lining the tin up with silver foil. You can also make up the sauce and the bean mix separately a little while in advance and then layer up and pop into the oven.






Mexican 'Lasagne'

Serves 4 kids and 2 adults - just.

1 large clove of garlic
1 red onion
1 tsp each of smoked paprika, ground coriander and ground cumin
500g fresh tomatoes (or replace this with a second tin of tomatoes)
1 400g tin chopped tomatoes
2 tins red kidney beans
2 small tins of sweetcorn
220g cheddar cheese
pack of 8 tortilla wraps (you'll need 6, so you can have 2 for packed lunches the next day)

If you're making this all at once, put the oven on to heat up to 200C.

Make the tomato sauce: crush the garlic and finely chop the onion. Heat some oil in a pan and gently fry the garlic and onion for 5-10 minutes till soft. While the onions are cooking, remove any woody stalky bits from the tomatoes, then roughly chop up, and set aside.

Add the smoked paprika, coriander and cumin to the onions and cook for another minute, before adding the fresh and tinned tomatoes and 2 cans' worth of water to the pan. Add some salt & pepper, bring to the boil then simmer for 20-30 minutes till the sauce is thickened and smelling delicious.

While the sauce is simmering, rinse the beans and corn, then mix together into a bowl. Grate the cheese, then stir in about 3/4 of it into the beans and save the rest of sprinkling on top.

Get your dish and layer everything up. I put a tortilla in the bottom of the dish, then a layer of beans and spread some sauce over it, and carried on layering, making sure you have a last tortilla and some sauce to spread over the top, then sprinkle the left over cheddar cheese and bake in the oven for 40-50 minutes. 



You could dress this up with guacamole, sour cream and all that jazz, but on Monday, it was fine as it was.

Plethora of healthy vegetarian food on a pure vegetarian restaurant near you (John H.)

It was my birthday last week, and I can't tell you how much I enjoyed the day. From when my wall clock stuck 12, started my mobile telephone. There were back-to-back calls with pip by messages of birthday greetings. When the pace of these messages began to slow down, then started bouquets raining. It went to 12 o'clock at noon. I was overwhelmed with all the messages, calls and bouquets, which I had not expected such a response from my friends and relatives. The reason I did not foresee when all of this is that last year on my birthday I received not a single call from my parents. And because I thought people might have forgotten that I am far away from those seated in the capital.

Since I stopped reminiscing about earlier and came back to the present. I thought they made my day, and now it is my turn to show my gratitude to them. And then the idea though of a celebration that also serves as a get together. But there was a dilemma in my mind and that was where I would give this party, for most of my friends are vegetarian and only a few are non-vegetarian. So, if I go for a non-vegetarian restaurant, friends they are vegetarians will not be happy. Therefore, it is best to go with a vegetarian outlet, for non-vegetarian does not remember eating in a vegetarian place.

In my search to find a good restaurant, I checked out almost a hundred hotels and restaurant, but to my surprise, I was not a good restaurant. That's when I called up one of my close friends for his proposal. He told me if I really want to enjoy my birthday party in full, then I have to choose, Sudh restaurant you have everything necessary for a good party. Each party is given on birthdays, anniversaries, marriages and for all other occasions, is known for the quality of the food served there. How To Make Vegetarian Lasagna For Everyone (rajiv tiwari)

Lasagna With Tofu

Ingredients:
* ? pound lasagna
* 2 10-ounce packages defrosted chopped spinach,
* 1 pound soft tofu
* 1 pound firm tofu
* 1 tablespoon sugar
* ? cup soymilk
* ? teaspoon garlic powder
* 2 tablespoons lemon juice
* 3 tablespoons minced basil
* Salt to taste
* 32-ounce jar tomato sauce

Directions:

1. Cook lasagna noodles al dente, drain and set aside.

2. Pre-heat oven to 350 degrees.

3. Dry the spinach as much as possible and set aside. Place the tofu, sugar, soymilk, garlic powder, lemon juice, basil and salt in a blender and mix till smooth.

4. Cover the bottom of a lasagna baking dish with a thin layer of sauce, followed by a layer of lasagna noodles. Add a layer of half the tofu and half the spinach. Continue the same way, using half the tomato sauce and noodles and the rest of the tofu mixture and spinach. The last layer should be the remaining noodles covered by the remaining tomato sauce.

5. Bake for 25 to 30 minutes till the tomato sauce bubbles.

Lasagna With Pumpking And Three Cheese

Ingredients:

* 1/2 pound sliced mushrooms
* 1 chopped onion
* Salt to taste

* 2 teaspoons olive oil
* 1 can of pumpkin
* ? cup of cream
* 1 teaspoon dried sage leaves
* Pepper to taste
* 9 no-cook lasagna noodles
* 1 cup ricotta cheese
* 1 cup shredded mozzarella cheese
* ? cup shredded Parmesan cheese

Directions:
1. Pre-heat oven to 375 degrees.

2. Slightly oil a lasagna baking dish.

3. Saut? the mushrooms, onion and salt in olive oil until soft and set aside.

4. In a dish, mix the pumpkin, cream, sage, pepper and salt.

5. Spread ? cup of pumpkin sauce in the lasagna baking dish. Add three noodles and place another layer of the pumpkin sauce on top. Now add half of the mushroom and onion mixture, half of the ricotta cheese, half of the mozzarella cheese and about a third of the Parmesan cheese. Repeat the layers once more. Top off the lasagna with remaining noodles and sauce. You should have a third of the Parmesan cheese remaining.

6. Cover the lasagna with foil and bake for 45 minutes.

7. Uncover and sprinkle with the remaining Parmesan cheese.

8. Bake again, uncovered, for another 10 minutes.

9. Let your lasagna cool for 10 minutes before serving!

* ? cup of red wine
* 1 tablespoon of Worcestershire sauce

* 1 French baguette
* Thinly sliced mozzarella

Directions:

1. Preheat the oven to 450?F.

2. Heat the margarine in a stockpot and add the onions and cook on a medium flame till they're soft. Keep stirring.

3. After around 10 minutes add the garlic, sugar and pepper.

4. After the onions are caramelized, add the flour, stirring to blend well.

5. Add the vegetable stock, wine, Worcestershire sauce and thyme and bring the soup to a boil. Reduce the flame, cover and let it simmer for 10 minutes. Your soup recipe is almost complete!

6. Slice and toast the baguette.

7. Place a slice of the baguette on top of each bowl of soup and cover with mozzarella. Place the bowls on a foiled baking dish.

8. Bake till the cheese just starts to melt.
