My First Encounter With Tiramisu on my Trip to Italy

When I visited Italy, I learnt about Tiramisu and I have never since been able to forget this rather wonderful dessert. Since most Italian dishes are very delicious and quite elaborate, at the end of such a meal, a worthwhile dessert is usually necessary. It is for this reason that Italians are actually very famous for their desserts.

Tiramisu is simply an Italian dessert that is created with ladyfingers that are dipped in coffee. These are then layered with egg yolk and mascarpone cheese having been whipped together. Cocoa is often used to add flavor to the dessert. The exact recipe for this dessert has been used to create several other cakes, puddings as well as desserts. It has also been slightly modified in many parts of the world to attain different tastes of the dessert.

The exact origin of this dessert is an issue that is very much under debate. While some people attribute it to an Italian chef from Venice, others say it originated in the city of Siena. There are some that say that confectioners came up with the recipe as a way to honor Cosimo III who was visiting the country at the time. As I learnt while in Italy, the word Tiramisu actually translates to 'make me happy' or 'pick me up', which according to some stories is a representative for the caffeine that is used as a part of the ingredients.

The exact origin of this dessert may be an issue of debate but the moment I tasted it for the first time, I knew for a fact that whoever had created it was a real genius. Tiramisu basically has a number of layers of biscuits that are soaked in coffee along with a mixture of sugar, eggs and cheese. To be able to prepare this biscuit layer, the Savoiardi biscuits are simply soaked in any strong coffee or espresso for that matter. To make the mascarpone cheese layer, usually some egg yolks and sugar are prepared first and then the cheese is added to the mixture. While I was learning how to prepare this dessert it occurred to me that when the layers are being added, they are then topped with some cocoa powder dusting. The reason for this is in the fact that this dessert is supposed to have a specific taste and anything short of this would not attain the intended purpose.

There are many different ways one can prepare Tiramisu and while some people prefer to have it sweet, others prefer it less sweet. There are a host of other cheese mixtures that I often use when preparing this dessert and some actually have raw eggs while others do not even have any eggs at all. Occasionally I add Marsala wine to the recipe. I have also learnt that there are other liquors that can be added to the mixture both in the case of the cheese mixture as well as the coffee mixture. Some of the liquors that can be added include Port, Brandy, Irish Cream and Madeira.

Is life to short to skin a broad bean?

Is life to short to skin a broad bean?

Not pod them. Of course you have to pod them. But once podded and steamed, do you then pop them out of their skins?


 
Opinion is divided but the general consensus among the cognoscentiwould seem to be that yes you should skin them, and the older the bean, the more pressing the need to skin. Broad bean skins can be tough and bitter tasting, but never one to bow to pressure, I have tended to just steam them and serve them as they are, allowing any dissent from the ranks to roll off my back. I ADORE broad beans, and can be quite intolerant of those (i.e. my children) who dare to express anything other than enjoyment when faced with them on the plate...  


When we were on our camping trip the other weekend, though, my friend brought some of her veg box broads with her, for what was a delicious chorizo & couscous dish, and insisted that the beans were skinned. A revelation, mainly because Pink who has hitherto rejected broad beans pronounced them "Quite good, really". They are much more subtle as a flavour with the skins off, and yes, much less bitter, although any broad beans knocking around at the moment are going to be pretty young, and not really bitter at all.


The garden is full of broad beans, there was fennel from the allotment and we had risotto - broad beans skinned. I think I have been converted.


I'm sure you don't need me to tell you how to make a risotto, and this evening's was a pretty unexact science. I should also say that I used fennel fronds from a golden fennel plant that is running rampant in the flower beds, because the Husband had trimmed the frondy bits off the actual fennel bulb before putting it in the fridge. The addition of the parsely and fennel fronds adds an extra flavour to the risotto, but you can leave it out.



Fennel & Broad Bean Risotto

olive oil
1 onion, finely chopped
1 clove of garlic, crushed
I stick of celery, finely chopped
1 fennel bulb, trimmed (save the frondy bits for chopping up as garnish) and finely sliced
200g risotto rice
'nearly a litre' (that's what it said on the tub I got out of the freezer) of chicken stock
a good handful of broad bean pods - probably about 20, podded
20g Grana Padano cheese, finely grated plus extra to serve
a good handful of parsley and the fennel fronds, finely chopped
salt & pepper


Heat a good lug of olive oil in a heavy based saucepan and add the onion garlic and celery. 

Fry gently for a few minutes then add the fennel and continue to cook gently till the fennel is softening.


Put the stock in a pan on the stove and warm gently.


Steam the broadbeans for a few minutes till the skins are starting to split, then remove from the heat. While you’re making the risotto, you can stir with one hand and pop the beans out of the skins with the other. Alternatively, if you are more organised than me, do this before you start making the risotto.


Add in the rice and stir for a minute or so to coat with the oil in the pan, then start adding the stock, a ladleful at a time, stirring as you go.


When the risotto rice is cooked through to the al dente point, remove from the heat. Taste first for seasoning and add salt and pepper as necessary, then stir in the skinned broad beans, the cheese and a knob or 2 of butter if you are feeling decadent. Put a lid on the pan and leave for a few minutes for the cheese and butter to melt.


Stir through the chopped herbs, and serve with more grated cheese.

Stir Fry Recipe on Sauces

Stir fry is an old ancient way of cooking dishes which is known to be very quick and easy. As it is quick it is also economical when utilizing fuel is concerned. But stir fry dishes have come to popularity due to its capability of retaining the flavors of the protein and the vegetables in it. Those flavors somehow merge together to bring up that fantastic taste found on Oriental Cuisines. But secretly, Chinese Cuisines depend on their recipes for sauces that is a blend of several herbs and oriental sauces that compliments any stir fry recipe. Here are some Chinese recipes for stir fry sauces that you may try at home.

1. THE CHINESE PLUM SAUCE:

Ingredients:

3 pounds plums

2 pounds peach

3 sweet red peppers, diced

4 large cloves of garlic, minced

1 onion, minced

4 cups cider vinegar

one ½ cups of water

½ cups cooking sherry

1 teaspoon soy sauce

1 ½ cup white sugar

one ½ cup packed light brown sugar

1 tablespoon ground ginger

one tablespoon pickling salt

1 tablespoon dry mustard powder

one teaspoon cayenne pepper

one teaspoon cinnamon

1 teaspoon cardamom

PROCEDURE:

Steam and blanch the plums and peaches for about 2 minutes, doing only 1 pound at a time. Do not overcrowd your pan. Skin and removed the pits.

In another large kettle, you can combine all the ingredients. Bring the kettle to a boil and then lower the heat to simmer for another 1 ½ to 2 hours, until the fruit falls apart and the syrup is quite thick enough. Please stir them frequently to avoid scorching or burning.

Pour the puree into a hot ½ pint jars leaving ½ inch head space, and then seal and process in a boiling water bath for 10 minutes. Remove the jars from the bath and cool them off. Once cold off, you can store them in refrigerators and they will last until you finish them to the last drop.

2. THE CHINESE SZECHUAN STIR FRY SAUCE:

Ingredients:

one ½ teaspoon sesame oil

½ teaspoon minced fresh ginger

½ teaspoon minced garlic

1/3 cup chicken broth

2 whole anise stars

1 ½ teaspoon red wine vinegar

one tablespoon soy sauce

½ teaspoon salt

one teaspoon hoisin sauce

1/8 teaspoon Tabasco sauce

1/8 teaspoon red pepper flakes, crush them into bits

¼ teaspoon pepper

1/8 teaspoon 5 spice powder

one tablespoon of water with dissolved 2 teaspoon cornstarch

PROCEDURE:

Heat the oil into a small sauce pan. Add the ginger and garlic and saute for about 12 minute, until softened but not brown. In another bowl, please combine the remaining ingredients, saving the cornstarch mixture for later. Add them to the saucepan and bring to a simmer, covered, for about 10 minutes. Remove the star anise. Whisk in the cornstarch mixture and let it boil for another 1 to 2 minutes. Taste and add more Tabasco of desired. This is now ready for any stir fry cooking.

It was jubilation time with friends (John H.)

Success is counted sweetest and fortunately I got the privilege to taste by the grace of God and the blessings of my parents. And to be modest I rate my efforts in the end. But I will tell you about this success was not easy at all. I studied around the clock and that they say add some metaphorical impressions burned the midnight oil. However, that effort I put in to achieve this goal is now impossible. It was truly an amazing feeling, all start to look up to you and greetings pour in from all over. And the unusual thing about it was all my relatives and neighbors they had once assigned me with the tag "vagabond" is now proud to say that they are my uncle, aunt, cousin and other close relatives.

Someone had said the fact that success has many fathers, failures have none. Yes, this saying has been used since ancient, but it is still as true as it was hundreds of centuries ago. Okay, leaving apart all that what is right, what is moral, what should and what should not be etc. Those things will be there as we have accepted them for being a part of human nature. I am very sorry that until now I don't have to tell you what exactly I have achieved, and from the beginning I kept beating around the Bush. Highness, I apologize for taking your precious time for granted. But now I take extra care not to repeat this throughout my correspondence.

Jokes apart, I got through UPSC exams and now prepares for the interview. However, my destination is inches away from me, but of course it is not ready yet. But who is going to make your near and dear ones including your friend circle. How much I try to circumvent the substance of the party, the more they get up talks about celebrating it with great pomp and show. I told them that it might not be possible because I come from the school that believes that nothing cheers until you conquer the last Fort.


But friends will be friends; they turn a deaf ear to any excuse as you do. So, even being reluctant to throw the party at this point, I had to give in to my friends. And since most of my friends are vegetarian, we checked out for the best vegetarian restaurant in Delhi. We came across a number of restaurants, but there was an exclusive restaurant for pure vegetarianmat and the different foods that were mentioned in his website was as followed: Gujrati Thali, Rajasthani cuisine, South Indian, North Indian food and other lip-smacking dishes. The best part of this restaurant was their reputation; It has recently won 4 consecutive times food prices. Another thing that attracted us to make our order was its free home delivery. Shortly after we placed our orders within half an hour was the food delivered to us. We opened the box and literary got lost there scent wafting. The author of this article is living in New Delhi. BBQ Ribs for the best weekend ever

We have a great local butcher. 

The other week, I was in there and had my head turned by some mighty fine racks of ribs he had in the chiller cabinet. I bought 2 racks, intending to feed them to the children as a playdate tea, but I got my weeks wrong, and the ribs went in the freezer.

This can only have been a good thing, as it meant we could BBQ them last weekend in what will surely be pretty high up on my list of "best weekends of the year" - even though we've only had just over half the year.

 
Yes, we had a hot, sticky and fairly slow journey to darkest Suffolk on Friday night, but once we were there, well, everything was brilliant. The site is very much 'of the moment' - plenty of bunting and hand written signs around, low density camping. A few Dorset bell tents to rent, the option to camp in the woods, Swattesfield Campsite is one I would definitely recommend if you like low key relaxed camping. It's just quite a long way from Hampshire for the weekend...




The weather was awesome, the campfire burned bright at night and the Pimms flowed. The children were occupied in the woods that surrounded the camping area, and the adults were mostly occupied with a wood fired pizza oven that was on the site (of which, more in another post), and we had a gourmet BBQ on Saturday night. And then Murray won Wimbledon as we chuntered back down the M11 in the sweltering heat of Sunday afternoon. Pretty much perfect.

So back to the ribs, which were our contribution to the gourmet BBQ. Ribs are great at any time, but marinaded and cooked over hot coals, they take on a smoky loveliness that can't be beaten. Not the cleanest and tidiest things to eat, but, you know, who cares?



The marinade is based on the one Hugh Fearnely-Whittingstall includes in his fantastic Meat book. In a fit of whirlwind organisation, I managed to decant about half the ingredients into their appropriate amounts into various small containers, and then just chucked in the bottles of anything else I needed into the van, but forgot the recipe - not even in scribbled form, so once the time for marinading came round, I had to wing it. 




I should say that Pimms had been consumed at this point, but not too much, and so I'd take this as a guide rather than as a definitive recipe. Just keep tasting as you go...


For 2 racks of ribs - approximately 24 ribs in total. I didn't count. I was drinking Pimms.

3 cloves of garlic, roughly chopped
2 tablespoons dark muscovado sugar
3 tablespoons ketchup
2 tablespoons soy sauce
1 tablespoon Dijon mustard
freshly ground salt and pepper
sherry vinegar to taste - probably about 3 tablespoons

Mix everything together and marinade the ribs for a good hour or 2 - longer if you can.

Cook on a suitably heated BBQ (let your friendly BBQ king take over at this point, if this is not you). They will take 10-15 minutes, may be 20 depending on how much meat they have on them.



Serve as you like. We had potato salad and a rather fancy broad bean (double podded no less, at the insistence of Mrs L) and chorizo couscous. We do like to camp in style...
