I have a confession to make.Within about 3 to 4 days my family and I finished the whole batch of granola. Making your own granola is so easy and delicious! Homemade granola is a lot more healthier too because you can control what goes into it. This granola recipe is filled with antioxidants from the nuts, dark chocolate and dried cranberries. Antioxidants are an essential part of our diet and can help keep a beautiful complexion. Try making this for mom for Mother’s Day with some greek yogurt or milk. Surprise her with breakfast in bed, she will love it (you just might need two spoons)!
2 cups rolled oats
¾ cup shredded coconut
½ cup unsalted cashews
½ cup silvered almonds
2 tbs. pumpkin seeds
1 tbs. honey
2 tbs. vegetable oil
½ cup real maple syrup
1 tsp. cinnamon
1 tsp. vanilla extract
pinch of sea salt
¼ cup chopped dried cranberries
¼ cup dark chocolate bits
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Add the rolled oats, coconut, cashews, almonds, pumpkin seeds, sea salt and cinnamon to a large bowl. Mix all of those ingredients together. In a separate dish combine the honey, vanilla, vegetable oil and maple syrup. Pour the maple syrup mixture on the oats and nuts. Stir to combine. Bake all of the ingredients on the baking sheet in a single layer. Stir the granola occasionally so that it doesn’t burn. Cook for about 40 minutes or until the granola turns a nice golden brown. Let the granola cool completely and then add the dark chocolate and dried cranberries.
