Hurricane Banana Bread

With Hurricane Irene at a past and electricity back, I will now share with you my recipe for banana bread.
Growing up whenever my mother had browned bananas we would make banana bread together. The difference is we would bake it.
This sweet and fruity bread is called hurricane banana bread because since we had no power, and couldn't bake I made it on my gas stove. I promise, you will get a moist and beautiful end product. Here is how I did it.

Recipe:
1 3/4 cups AP flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
2/3 cup sugar
pinch of salt
4 tbs. coarse bran (organic and unprocessed)
1/3 cup olive oil
2 eggs
2 tbs. milk
1 1/2 cups mashed ripe bananas

Incorporate the flour, baking powder, coarse bran, salt and baking soda.

In a seperate large bowl beat together the sugar and olive oil until fully mixed together. Then add the eggs one at the time and the milk. In another bowl mash the bananas with a fork until they are smooth but still a little chunky. Alternately add the flour mixture and the mashed bananas to the sugar and egg bowl, until all is fully combined.

Grease a non stick 2 quart sauce pan with about 2 tbs of olive oil. Make sure you grease the sides and the bottom that way nothing burns or sticks. Keep in mind that this bread will rise so make sure that you grease the whole pan and that your pan is large enough. Then put your uncooked batter into the pan and put on low and cover for about 65-85 mins. or until a tooth pick comes out clean. You may have to turn up the heat a little during the cooking time but make sure for the most part that is is on low for the majority of the time and always keep it covered. By keeping it covered, it steams it and makes it moist. Add a tbs. of sugar to the top in the end, bang it on the counter and hit it on the back in order to get it out of the pan. I carved off the bottom dark outer layer and then let it cool.





It goes great with tea or peanut butter!


My parents always said that it is good to be bored so for this and the previous two blog entries, you may see if from my loss of what to do during the storm sparked up any new inventions. Judge it for yourself.
