Olive oil gelato is a popular exotic gelato flavor. This custard flavor is something I just thought of during the storm while making my Hurricane Banana Bread (above). Since most ice creams are essentially frozen custards here is my olive oil custard.Recipe:
2/3 cup sugar
1/3 cup olive oil
2 eggs
2 tbs. milk
In a seperate large bowl beat together the sugar and olive oil until fully mixed together. Then add the eggs one at the time and the milk. Put on the stove switching between low-medium for about 12 mins or until it coats the back of a wooden spoon. Let it cool and thicken. You could serve this with a drizzle of olive oil, a sprinkle of sea salt and a helping of strawberries or eat it as is.
