Come to terms with it. It is fall. One of my favorite things about the changes of season is the changes of produce. Eating in season is always the best thing to do. I mean it just builds up suspense! Who would ever want apples in summer? Or cherries in fall? Instead you can look forward to the produce at it's peak of freshness.
Are you in need of a fallish oatmeal? Well I have just the one for you.
1 cup milk
1/2 cup oats
pinch of salt
pinch of ground ginger, allspice and nutmeg
1 heaping tp of cinnamon
splash of vinalla extract
1/2 cup pumpkin
*2 egg whites
**1/4 cup and topping maple syrup
Boil the milk. Add the oats and stir occasionally for 5 minutes....
Towards the end of these 5 minutes, add the spices, vinnalla, pumpkin and maple syrup.
Whisk together two egg whites until you reach medium peaks. In batches, incorporate the whipped eggs into the warm oatmeal. Top with more maple syrup and any or more of the variations below.
**Varations on this oatmeal-
-brown sugar
-nuts
-pumpkin seeds
-flax seed
*-no egg whites (I added the whipped egg whites so the consistency of the oatmeal would be airy and fluffy. The egg whites also add protein; however, if you do not like the idea of egg whites or the fact that they are merely whipped....omit them).
