Ingredients

3 egg yolks
Juice of 2 whole lemons
2 sticks butter, melted and slightly cooled
Dash of salt
Cayenne pepper
4 whole eggs
2 English muffins split, toasted and buttered

4 slices Canadian bacon, warmed in a skillet
Dash of paprika

Directions

Add the egg yolks to a blender or a food processor. Add in the lemon juice and blend for several seconds. With the blender on, slowly drizzle in the melted butter. Turn off the blender and add in a little salt and cayenne. Whip it again until combined. Set this aside for a minute.

Next, poach an egg by gently cracking an egg into simmering, slightly bubbling water.

Leave the egg alone for 2 to 2 1/2 minutes, and then remove it with a slotted spoon and carefully place it on a plate. Repeat with the remaining eggs.

To serve, place a buttered, toasted English muffin half on a plate. Top the English muffin with a warm slice of Canadian bacon. Place the warm poached egg on top. And then drizzle on some warm hollandaise. Sprinkle a little paprika on top.

One should not consume raw and lightly-cooked eggs due to the risk of Salmonella or other food-borne illness. To reduce this risk, use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell. For recipes that call for eggs that are raw or undercooked when the dish is served use shell eggs that have been treated to destroy Salmonella, by pasteurization or another approved method.

Ginger-Mint Green Iced Tea

This is a very refreshing and interesting iced tea. So cool off from the hot sun and make this drink!

Don't you just want to dive right in?
I personally enjoy having my tea unsweetened but this drink would be lovely sweetened with either honey, agave or simple syrup!

Ingredients:
peeled fresh ginger, as needed
1 huge handful of torn fresh mint
9 cups of freshly brewed green tea (I used about 10 tea bags)
2 lemons, thinly sliced

Pour the green tea into a large pitcher. Add the lemon slices and mint. *Meanwhile follow your juicing machine's instructions and juice the fresh ginger. You want about 3-4 tbs of ginger juice. If desired, add the ginger pulp as well. Add this to the tea. Place the pitcher into the refrigerator and let it get cool. Add ice cubes and serve.

*If you do not have a juicer you can chop up extra ginger and add it to the tea.

Why Katie Piper made me cry

Ever since Saturday morning, when I blubbed shamelessly as Katie Piper talked frankly to a packed, and silent, Britmums Live audience, and then even more so, talking to her mum and Katie Hill (teary, tissue-less and overwrought, never have I felt less glamorous, let me tell you), I have been pondering why exactly she made me cry.

It's not just her story - the beautiful good time girl, going places (possibly - she is refreshingly candid about the career opportunities available presenting casino programmes on channel 999 at 2 a.m.) raped and then burned horrifically with acid thrown over her at the behest of a man who couldn't have her.


It's not just the fact that she can - and clearly throughout her recovery, did, laugh at her situation. Not at all of it, but at the comical moments that can often - and almost totally inappropriately -  come in times of great trauma and distress, She tells a cracking story about squirting blackberry juice out of the feeding tube attached to her stomach while wearing a flesh coloured 'morph suit' (her 'earthworm Jim suit' - to stop the burns contracting) - but I guess you had to be there.


It's not just the fact that she has taken what has happened to her and survived in the most inspiring way, turning her experiences into a charity to support others who have been burned, filling gaps in the NHS provision, which, with the best will in the world, public money cannot currently cover.

It's not just that she is so disarmingly honest about the support she received from her family, about how dark the really dark times were, about how cruel people were to her, and about her agoraphobia.

All these things make her a truly remarkable survivor. It puts my life and the things that have happened to me sharply into perspective. But here's the thing. She gets annoyed when people start talking about something bad that happened to them and then they say "Oh but it's nothing like what you have been through". Why does she get annoyed? Well, you see as she puts it - it doesn't matter what 'it' is - if it's your worst thing, then yes it is bad, it is worth getting upset about.

What trauma have I suffered. Well let me tell you - if you didn't know already - my son had leukaemia. My lively 2 year old withered before my eyes, almost overnight. 9 months into treatment, he had no hair, was on the 2nd centile (from 98th when born) and the doctors were talking about feeding tubes. We spent endless hours in hospital. The drugs made him sick. He had blood and platelet transfusions. He had a terrifying allergic reaction to one of his drugs. I thought he might die. My son.

He had the disease. The Husband and I - we dealt with the fall out. And a new baby.

People say similar to me when talking about their children. People who have had what I consider to be equally traumatic experiences, or even people talking about a broken arm. They say "Oh but it's nothing like what you went through". Or they say "I don't think I could have got through what you did". To that I say, firstly, as Katie Piper says, it doesn't matter what it is - if it's the worst that you have had to deal with, then it's bad. It's not a question of degree. It is valid to feel distraught, lost, confused - even if you're dealing with chicken pox. 

Secondly, and perhaps more importantly, you do have a choice. You can drown in the injustice of it all, or you can try and work out how to cope and get through it. I know someone whose son was at a similar age, living in the same village who died of a brain tumour when Blue was being treated. She and I were pregnant at the same time and gave birth to our second children within days of each other. She told me once that she thought she was lucky because I still had the uncertainty of whether Blue would survive hanging over me. She knew, so sadly, how her son's story ended, and she thought she was in a better position than me. I have never spoken to her about it, but I suspect this was one of her ways of coping. 

I consider us to be lucky. Not that Blue became ill - I wouldn't wish that on anyone. But he's still here. We just passed the 4 years "off-treatment" point - one more to go before we'll get as much of an 'all clear' as they will give us. I haven't lost a child, been physically attacked or suffered any of the other terrible things that can happen, although if you want dark hours, I can give them to you in buckets. The important thing is that he has survived.

We are lucky too, to have survived as a family. Lots of people don't. Families break up under pressure, and it's hard, so hard to keep lines of communication open when you've been awake all night worried sick about your child, or had to go to work and leave your child as he goes into an operation because of a meeting you can't afford to miss. It's hard because day to day life becomes more difficult on every level physically and financially - do you know how expensive hospital parking is? You have to make decisions you never thought you would be faced with. It's hard but you choose to make those decisions in order to survive.

We had a choice, and what made me cry was hearing someone else who has survived - and is possibly still surviving - talking so eloquently about her choice. Katie Piper demonstrates so simply and so beautifully that you DO have a choice. Even in the darkest hours of your life, you can choose to be beaten by it all, or to fight. It takes a lot of energy and support, and it's not easy, but you can do it, be your injuries physically or emotional, whether you're the person who's been hurt or someone supporting and caring for that person. 

And the relief of hearing someone else say all that made me cry.

Fettuccine Pasta Recipe With Tuna And Pepper (rajiv tiwari)

Fettuccine, one of the tastiest noodles for any pasta recipe, is had best with creamy sauces and rich flavours. If you know how to make pasta with just the right texture, flavour and bite, your recipe will be a hit among everybody! Try out this unique dish and taste the wonder.

Ingredients:

* 2 pound boneless chicken breasts, cut into thin strips
* 2 pound asparagus spears, cut into diagonal slices
* 4 tablespoons butter
* 1 ? pound fettuccine
* Salt to taste
* Ground black pepper to taste
* 6 tablespoons chopped shallots
* 1 cup dry sherry
* 1 ? cup of heavy cream
* ? teaspoon nutmeg
* ? pound goat cheese
* 2 tablespoon lemon juice
* 4 tablespoons chopped fresh tarragon
* 2 cups grated Parmesan cheese

Directions:

1. To start off with your pasta recipe, cook asparagus in boiling water for 2-4 minutes.

2. Once done, drain and put it into a bowl of ice water to completely stop the cooking. Leave it for around a minute, then drain and keep it aside.

3. In a large pot, bring heavily salted water to boil. Cook the pasta in it till al dente and keep aside around half a cup of the water for later in the pasta recipe.


4. While the pasta is cooking, melt butter in a large pan over a medium flame. Add the chicken strips to the pan, evenly so that they cook well for the pasta recipe. Season with salt and pepper according to your taste. Cook without stirring till the chicken is nicely browned and add the shallots and asparagus, cook for a little longer.

5. Add the dry sherry and let it reduce by half for a perfect pasta recipe.

6. Add in the cream, nutmeg, goat cheese and most of the Parmesan. Cook, stirring, until the cheese has fully melted and mixed with the cream to make a pasta recipe with a smooth sauce.

7. Add in the lemon juice and tarragon, and season with more black pepper to taste.

8. Place your pasta in a serving bowl and stir in the chicken asparagus cream sauce.

9. Add as much of the reserved pasta cooking water as needed for a smooth and creamy consistency for the pasta recipe.

10. Garnish with the remaining grated Parmesan.

Your fettuccine pasta recipe is ready to be gorged on! Serve it hot in warm plates to be enjoyed in the best way.

Healthy & Happy Banana Cinammon Loaf (with secret courgette) - a Random Recipe

The lovely Dom has been indisposed in rather an unpleasant way recently, so to make up for it, his Random Recipes challenge this month is to cook something 'Healthy & Happy'.



I must confess that my recipe is not quite so random as some of my previous entries, as I have very clear views as to what 'healthy & happy' means, basically that cake has to be involved. 

A salad may be healthy and tasty , and piece of grilled meat could be healthy and juicy, but 'healthy and happy'? Well, cake it has to be.


As a result, there was only one book on my shelf I could reach for, Harry Eastwood's "Red Velvet and Chocolate Heartache" which I have delved into a couple of times recently. Basically a load of cake with veg - hidden or not.

For added randomness, I allowed Pink the privilege of choosing the recipe, and for her to have chosen this one is pretty random because it includes bananas which, in her own words "Well, I do like them Mummy, I just don't like the idea of them so I have to forget that it's a banana and then I like it." Nothing like a 7 year old's random views, is there? It also includes courgette which she avowedly detests. This is a big problem in our house, where courgette is on the menu pretty much from June (we've had courgette in the veg box for the last couple of weeks, and our own plants are growing nicely, thank you). May be she felt that if it was in a cake, it would be OK.


Well, she was right, if she did think that. You really can't tell there's any courgette in it. It's light and tasty and there's absolutely no hint of hidden veg. It's actually less banana-y than other banana loaves too, so perfect for those less enamoured with them. I made a Nigella based banana loaf at the same time which includes about 3 times the amount of banana, and consequently is much more so. 

There is no fat in the cake, in the form of butter or oil. Heat an ungreased GRIDDLE or cast-iron skillet. Cook tortillas on GRIDDLE one at a time, turn when a bubble forms (less than a minute). Put the cooked tortillas in a plastic bag until ready to serve, to keep them warm and soft. Serve with butter, or fill with eggs, cheese or cooked chicken.

Strawberry Picking



What could be better than fresh, local and juicy berries in the summertime? Handpicking them yourself of course! My aunt and I went strawberry picking at a local farm. It was so much fun! There was a real sense of community and I love being able to support local farmers. We were also surrounded by adorable toddlers who were shoveling strawberries into their mouths which resulted in red juice all over their faces and hands! This was so cute and I loved seeing younger kids getting involved with food from an early age and really getting to understand where good food comes from.








We ended up picking 26 pounds of strawberries! Of course we gave some away fresh to friends and family, but we also made our own fresh strawberry jam together. We made three variations- classic strawberry jam, strawberry-balsamic jam, and strawberry-basil jam. Jam is such a fun way to preserve fresh produce. You can really make a jam out of almost anything! Jam also makes a great hostess gift if you are going to a party!

Vietnamese cooking lessons at School of Wok are perfect if you're a newbie to the cuisine or even an experienced foodie, teaching you a ton of recipes that are great for the summer. So now that the weather is starting to (finally) pick up, we thought we'd take a look at one of Vietnam's quintessential snacks: summer rolls.

Summer rolls, also known as goi cuon or Vietnamese spring rolls, differ from the more widely known Chinese spring rolls in that they're uncooked, a little larger and jam-packed to the brim.

They're often stuffed with raw vegetables and chilli, rice vermicelli and herbs such as mint and coriander (with the addition of meat or fish being completely optional). They're then typically dipped in salty, zingy or sweet sauces before devouring - perfect food for sharing with friends and family around the dinner table!

According to Nguyet Pawlyn, School of Wok's very-own Vietnamese cookery specialist, summer rolls are really fun to make and great for the summer months.

"Summer rolls are very much part of Vietnamese cuisine as it's an interactive experience: all the ingredients are brought to the table, so each person can make there own, making it to their own taste. They're very simple to make and so fresh and healthy!"


See below for School of Wok's own simple yet tasty recipe for summer rolls, ideal for a quick, easy and ultra-healthy meat-free meal anytime of the week. These are extremely versatile and great for experimenting with different flavours...or just what's left over in your fridge!

INGREDIENTS

1 pack Vietnamese rice-flour paper wrappers
Handful of rice vermicelli, soaked in hot water for 3 mins then drained
3 spring onions, sliced finely
8 dried Chinese Mushrooms, soaked in hot water overnight then roughly chopped
1 bag bean sprouts
4 carrots, cut into matchsticks
Handful of mint leaves

The Marinade
2 tbsp light soy sauce
1 tsp sugar
1 tsp sesame oil

The Lime Dressing
1 chilli, finely chopped
2 cloves garlic, finely chopped
Juice of 3 limes
3 tbsp honey or palm sugar
1 tbsp sesame oil
Light soy sauce, to taste

Dress the spring onions, mushrooms, bean sprouts and carrots lightly with the marinade mixture in a large bowl.

Dip 1 paper wrapper into a bowl of cold water until soft then lay flat on a work top or plate. Place a small handful of the marinated vegetables into the centre arranged into a small rectangle, leaving space at either side.

Fold the bottom of the wrapper over the vegetables and stick down (the pastry should be sticky enough to stick to itself). Roll the wrappers up tightly so it just encloses the filling, fold in the sides and stick, then continue to roll until fully closed. Repeat with the rest (until you run out of ingredients!).

Mix together ingredients for the lime dressing then serve alongside your stack of summer rolls.

Using The Rangemaster Professional Plus To Make Beef Hotpot (Eva Fox)

It can be a challenge to work a full time job, manage a family, participate in hobbies, enjoy times with friends, and still find time to make home cooked meals. Luckily, for busy people like yourself, the rangemaster professional plus is exactly the tool you need to make cooking meals a snap. Not only will they be easy to make, but they'll be delicious and your family will think you were slaving in the kitchen for ages. You don't have to tell anyone how simple the rangemaster professional plus is to use. Here is a great recipe for making beef hotpot. It's perfect for a chilly winter evening when you want to stay inside with your loved ones and be warmed from the inside out.

Ingredients:

* 1kg braising steak trimmed into 5cm chunks
* Salt & pepper
* 1 tablespoon vegetable oil
* 75g butter
* 150g peeled baby onions
* 4 carrots peeled and cut into chunks
* 1 tablespoon plain flour
* 200mL red wine
* 400mL beef stock
* 2 fresh thyme sprigs
* 1kg potatoes cut into 5mm chunks

Once you've compiled all of the ingredients, you'll want to preheat your rangemaster professional plus to 170C. The following steps will take you from preparation to the completion of a delicious meal made solely in your rangemaster professional plus.

1) Season the steak with salt and freshly ground black pepper
2) Heat the rangemaster professional plus until it's very hot and then add the oil and a little bit of butter.

3) Fry the beef until it's browned all over and then take it out of the pan and put it on a plate somewhere nearby but out of the way. You'll probably have to do this in batches since the rangemaster professional plus can't accommodate the entire kilogram of beef at one time.
4) Add the onions and little more butter to the rangemaster professional plus and fry another 2-3 minutes or until lightly browned.
5) Add carrots and cook another minute.
6) Stir in the flour to the mixture already in the rangemaster professional plus and gradually do the same with the red wine. Make sure that you stir it until it's smooth.
7) Add the browned beef and beef stock, seasoning again with your salt and pepper.
8) Bring the entire thing to a boil.
9) Stir the thyme into the mixture in the rangemaster professional plus and lastly, arrange the potatoes on top.
10) If you have any remaining butter, use that on the surface.
11) Put the lid on the rangemaster professional plus and cook for one hour.
12) Remove the lid and then increase the head to 200C for another 30 minutes.
13) Enjoy!

This recipe for a beef hotpot is a great way to make a satisfying comfort meal in a flash. Once you've done the preparation, it doesn't take long to get all the ingredients into the rangemaster professional plus and then you just have to let it cook on its own and in no time at all, it'll be ready to be enjoyed by you and your loved ones.

Delicious Marshmallows from Little Delicious - A Review

I'll cut straight to the chase. Marshmallows are not where I tend to go for my sugar fix. I'm more of a dedicated chocolate kind of gal. But all that might be about to change.






You see up to now, I have only know marshmallows of the pink and white kind. The kind you burn your mouth on after over-enthusiastic campfire toasting; the kind that don't really taste of that much other than sweet (or burnt if you eat them how I tend to - see above); the kind that are pretty good with chocolate in S'mores; the kind that you can play 'Chubby Bunnies' with (Google it. And buy in the wherewithal for mojitos. That's all I'll say on the matter).

But all that may be about to change. I have been enchanted some truly delicious marshmallows, made in Southampton, not that far away from me. 

They are heavenly. 

They are Little Delicious handmade gourmet marshmallows.


Lin at Little Delicious sent me  raspberry, passion fruit and caramel peanut heaven to try.




Everything about these is luscious. They taste of the flavours they are supposed to taste of - the raspberry ones in particular, but there was no fake flavour tang knocking around in any of them. And while my menfolk weren't so keen on the caramel peanut heaven variety, Pink and I were more than happy to finish off their share. 

They didn't last long, I have to tell you.



Divine light mouthfuls of loveliness. These are not marshmallows to be toasted, combined with chocolate and crackers or ... (no I told you - Google 'chubby bunnies'. I'm NOT going to repeat it here). These are marshmallows to be savoured. After dinner marshmallows. Real treats.

And the good news is that while they are stocked in a few Hampshire outlets, you can buy them on line. Oh yes. And in more flavours, too - lemon meringue, coconut, minto choc chip to name a few. But if you want a recommendation, well, I commend the 3 flavours I tried to you. 

Chocolate. my friend, your days are numbered...

* 1 garlic clove
* Cup lightly packed parsley
* 2 cups spinach, chopped
* Cup of grated parmesan
* tbsp dried Basil
* one tablespoon lemon juice
* 1 6 inch whole wheat pitas
* Cup red bell pepper, chopped
* Cup of grated mozzarella cheese

Directions:

1. finely chop garlic and parsley finely in a food processor to make the best sauce to pizza recipe.

2. Add spinach, parmesan, Basil and lemon juice & grind until it is well blended.

3. Open and mix with a fork and grind for a little longer until texture is smooth sauce for the pizza recipe.

4. slice the pita bread in half and spread some of the spinach mixture inside each pita bread round. To continure with pizza recipe, add paprika & cheese on top.

5. Bake at 230 ? C until cheese melts. Serve it hot to taste the best.

Tasty toppings makes great Pizza recipe

Ingredients:

* Par-baked pizza crust
* lb spinach
* 2 medium sliced onions

* 1/2 lb. mozzarella cheese
* 2 tablespoons cheddar cheese
* 2 medium tomatoes
* TSP Turmeric
* 1 tbsp olive oil
* 1 tablespoon Parmesan cheese
* Salt to taste
* Pepper

Directions:

1. This pizza recipe is very healthy and delicious taste.

2. Dice up all the spinach and put it in a pot to boil. Put water to just cover the spinach and add a little salt to taste. Bring the mixture to the boil and cook for about five minutes. Cool and drain. Your pizza recipe is almost ready to go.

3. preheat the oven to 175 C ? to cook the pizza recipe.

4. heat olive oil in a frying pan over a medium heat and saut the onions until golden brown but not burned.

5. Add seasoning of turmeric, salt and pepper and quickly mix the spinach. Then add the cheese, continuing to mix.

6. spread the mixture over the crust evenly for perfect pizza recipes.

7. Add the chopped tomatoes and sprinkle easy Parmesan on top.

8. place in pre-heated and cook until golden brown and the cheese is well melted.

Exotic lamb Pizza recipe that you should wait to taste

Ingredients:

* 1 green onion, finely chopped
* 2 tablespoons cup packed mint leaves, finely chopped
* 3 tbsp parsley, finely chopped
* 1 garlic cloves, chopped
* 150 g lean ground lamb
* 1 tablespoon tomato paste
* teaspoon chili flakes
* Salt to taste
* 1 6-inch thin pizza crust
* 1 tbsp lemon juice
* 1 tbsp tahini
* 1 cup baby Arugula
* cup cherry tomatoes, halved
* 4 tablespoons thinly sliced red onion

Directions:

1. preheat the oven to 230 C ? to cook the pizza recipe.

2. mix the green onions, half of the Mint, parsley and garlic in a separate bowl.

3. stir in the Lamb, tomato paste, chili flakes and salt and mix well. Add the pepper in the seasoning.

4. spread the Lamb mixture over the crust of the pizza recipe. Put it on a baking rack.

5. Bake pizza recipe in the oven until the lamb is cooked through.

6. stir in the lemon juice, tahini and two tablespoons of water. Add pepper for seasoning.

7. Combine arugula with tomatoes, red onion and remaining Mint in a medium bowl for remaining topping the pizza recipe.

8. transfer the cooked pizza recipes and cool for 5 minutes. Add Arugula mixture on top and Drizzle with tahini dressing.


9. Slice pizza recipe and serve!

A Prosciutto Pizza recipe that will not disappoint

Ingredients:

* 350 g package whole pizza dough
* 3 tbsp olive oil
* 100 ml can pizza sauce
* 250 g fresh mozzarella, sliced
* 4 slices prosciutto
* Cup fresh basil, chopped

Directions:

1. heat one side of the grill to medium-high and cook the pizza recipe.

2. Divide pizza recipes the dough evenly into 3 pieces. Roll each piece on a lightly floured surface to 6 inch crusts.

3. cover one side of the dough by brushing the oil evenly.

4. Slowly place the pizza crust recipe, oil-side down on heated Grill. Brush oil over dough. Grill until it begins to blow up and grill marks appear on the bottom.

5. Turn the scabs over and continue cooking until you get the same results. Transfer to the unheated side of the grill.

6. spread 2 tablespoons pizza sauce over each crust and put cheese on top.

7. Bbq pizza recipe again, rotate and swap pizza halfway through, until the cheese is melted in about 10 minutes.

8. Put prosciutto and basil on top and serve!

Method
Boil the three soaked beans separately in one cup of salted water each till soft. Drain and let them cool. Boil French beans in one cup of salted boiling water till done. Drain immediately (you may reserve the cooking liquid for some other recipe) and refresh with cold water. Dilute lemon juice with equal amount of water. Stir in chopped coriander leaves, mint leaves, green chilies and chaat masala. Shake well and refrigerate the dressing for at least an hour. Mix all the cooked beans with diced onion and add the dressing. Toss the salad to evenly mix the dressing and serve cold.

It was my birthday last week, and I can't tell you how much I enjoyed the day. From when my wall clock stuck 12, started my mobile telephone. There were back-to-back calls with pip by messages of birthday greetings. When the pace of these messages began to slow down, then started bouquets raining. It went to 12 o'clock at noon. I was overwhelmed with all the messages, calls and bouquets, which I had not expected such a response from my friends and relatives. The reason I did not foresee when all of this is that last year on my birthday I received not a single call from my parents. And because I thought people might have forgotten that I am far away from those seated in the capital.

Since I stopped reminiscing about earlier and came back to the present. I thought they made my day, and now it is my turn to show my gratitude to them. And then the idea though of a celebration that also serves as a get together. But there was a dilemma in my mind and that was where I would give this party, for most of my friends are vegetarian and only a few are non-vegetarian. So, if I go for a non-vegetarian restaurant, friends they are vegetarians will not be happy. Therefore, it is best to go with a vegetarian outlet, for non-vegetarian does not remember eating in a vegetarian place.

In my search to find a good restaurant, I checked out almost a hundred hotels and restaurant, but to my surprise, I was not a good restaurant. That's when I called up one of my close friends for his proposal. Throwing a party can be a lot of work. But planning for an event can be simpler if you select a theme for your party snack food Often a party table will be set with dips, bite-sized nibbles, cheese snacks, and veggie trays. Give your recipes a Dash of herbs-chicken & Basil Stir Fry (India)

No one wants to eat bland food, but ladling on sauces and gravies only adds excess fat and calories in your diet. Fortunately calories herbs add flavor without the extra baggage, and they are easy to use. Herbs are edible, fragrant plants that adds flavor and nutrients for many types of food. By playing with herbal variations in your recipe, you can get a completely different flavor every time you cook. When you choose dried herbs, it is best to buy organic so you are certain herbs have not been irradiated. When you buy fresh herbs, either in the grocery store or a farmers ' market, be sure to get them as close as possible to the date that you intend to use them.
Before cooking with fresh herbs, you need to wash them carefully. Rinse the herbs under running water, and then place them on a paper towel or shake them by drought. If you are cleaning large leaves like Basil or a large bunch parsley, place them in a bowl with cold water and spin around. Transfer the herbs into a clean Bowl with water and continue rinsing until the water becomes clear. Then dry them and prepare them for cooking. Generally, you want to use only the leaves, stems, of the herb.

Different types of herbs can be used for different dishes.
* Oregano and Basil pasta and sauces
* Rosemary and thyme chicken and vegetable dishes
* Dill for cauliflower, cucumber, and fish and fish sauces
* Parsley for fish, soups, vegetables and tomato sauce
* Mint for salad, drinks and desserts
* Marjoram for stews, soups and egg
* Cilantro of Mexican and Thai cuisine

Chicken & Basil stir fry
* Prep time 40 minutes

* Total time 40 minutes
* Return serves 4

Ingredients

* 1 1/2 pounds boneless, skinless chicken breast halves, cut crosswise into 1/4-inch-thick slices (longer pieces cut crosswise in half again)
* 1 tablespoon corn starch
* Coarse salt and ground pepper
* 6 TSP vegetable oil
* 1 small onion, halved and cut into 1/4-inch-thick wedges
* 2 bell peppers (red, yellow, green, or a mixture, ribs and seeds removed), cut into strips 1/4-inch across
* 6 garlic cloves, chopped
* 2 tbsp rice vinegar
* 2 tablespoons soy sauce
* 1 1/2 dl fresh basil, leaves torn in half
* Cooked White rice, for serving (optional)

Directions

Pat chicken pieces dry with paper towels. In a medium bowl, toss chicken with cornstarch until coated; Season generously with salt and pepper.

In a large wok or nonstick skillet, heat 2 teaspoons oil over medium-high. Boil half a chicken, turning once, until browned, but not completely cooked through, 2 to 3 minutes total. Transfer to a plate. Repeat with another 2 teaspoons of oil and remaining chicken. Transfer the chicken to a plate. Set aside. Wipe out pan with a paper towel.

Skillet, add remaining 2 teaspoons oil, onion and bell pepper; Cook over medium heat, tossing frequently, until beginning to Brown, about 3 minutes. Add the garlic; Cook until fragrant, about 1 minute.

Add 1/4 cup water, vinegar, soy sauce and chicken to pan; Cook, tossing, until the chicken is cooked through, about 1 minute. Remove from the heat. Stir the basil leaves. Serve immediately, over white rice, if desired.

How to make Pizza with Pancetta (rajiv tiwari)

Ingredients:

* 2 cups chopped potatoes
* Salt to taste
* 1 ready-made pizza dough
* About 1 tbsp olive oil
* Cup of flour on the surface
* 1/3 cups of cornmeal
* pound pancetta, diced
* cup roasted red bell pepper, julienned
* pound taleggio cheese, sliced
* 4 tbsp grated parmesan
* Pepper
* Basil for garnish
* Juice of lime and Spice

Directions:
1. to start your pizza recipe, preheat the oven to 200 C ?.

2. Put water in a large pot and bring it to a boil. Put the potatoes in the boiling water and cook until the ingredients are just tender but not completely cooked.

3. remove the potatoes from the water and place on a dry cloth to cool. If you think they're cool enough to cut, chop them into 1/3 inch slices of perfect pizza recipes the topping.

4. in another saucepan, Cook the pancetta as you have over medium-high heat. Cook until most of the fat has rendered out and crispy. For a healthy pizza recipe, drain oil and dry on a paper towel.


5. Flour a clean work area and roll out the dough into pizza recipe until inch thick.

6. Add the sliced potatoes to the top of the pizza dough recipe and make sure the entire surface is covered. Sprinkle a little olive oil on top of the potatoes and place in the oven. Bake for about 10 minutes until the potatoes begin to Brown.

7. remove the pizza recipe from the oven and sprinkle the cooked pancetta, red pepper, red pepper flakes and both cheese on top as you want.

8. put pizza recipe back to bake and cook for about 6 minutes until the cheese has melted and the top of the pizza begins to Brown.

9. remove the pizza recipe from the oven and sprinkle the cracked black pepper and chopped Basil on top.

10. Let the pizza recipe to cool slightly before cutting, Drizzle with lime juice on top and sprinkle with lime zest.

11. Your pizza recipe is ready to cut and serve!

Broadbean tips - huh? What are they good for?

Broad bean tips have featured in my life as long as I can remember.



There's a mystique around them that anyone who's grown up with a veg gardener will appreciate. 

At a certain stage in a broad bean plant's life, you must pinch out the tips and miraculously prevent the dreaded black fly (who find the broad bean tip a superior place to colonise and then destroy your beautiful plants).


There's a lot of teeth sucking that surrounds this event - and the jury is definitely out as to whether pinching out the tips does actually stop the black fly. However, the Husband had been muttering about it, so last week, I armed myself with a colander and set forth to pinch out the tips

The result? Some delicious greens. Just the sort of thing to go in a stir fry.

Preparing the lovely Italian dessert panna cotta (Jim Doyle)

This dish comes from Piedmont, the Northern Italian region. Panna cotta is eaten all over Italy now where it is served with chocolate sauce, fruits, berries and caramel.

Recipe for preparing panna cotta served with fresh berries

Ingredients:

Whole milk - 1 c
Powdered unflavoured gelatin - 1 spoon
Whipping cream - 1 c
Honey - 1/3 c
Sugar - 1 spoon
Salt - 1 pinch
Assorted fresh berries - 2 c
Preparation: In a small bowl, place the milk. Over them sprinkle the gelatin. Let it stand for about 5 minutes so that the gelatin will soften. Into a heavy saucepan, pour the milk mixture and over medium heat, stir it till the gelatin gets dissolved but the milk should not boil, for about 5 minutes. Add honey, cream, salt and sugar. Stir till the sugar dissolves, for about 7 minutes. Remove it from the heat. Pour it into wine glasses and fill only to the half. Cool it slightly. Keep it in the fridge till it sets, for at least 5 hours. Over the top of the panna cotta, spoon the berries and serve.
Panna cotta - vanilla flavored
Ingredients:
Heavy cream - 1 c
Vanilla bean - 1
Sugar - 1/2 c
Unflavoured gelatin - 1 1/2 tsp
Whole milk - 1/2 c
Whole milk yoghurt - 1/2 c
Fresh mint and sliced strawberries for garnishing

Preparation: In a saucepan, place the cream. Cut the vanilla into two halves lengthwise. Take out the seeds using a knife, then into the saucepan add the pod and the seeds. Add the sugar. Over medium heat, cook the mixture, stirring occasionally. Then, discard the vanilla pod. In a bowl, pour the milk and sprinkle gelatin. Let it stand for 5 minutes till the gelatin softens. Into the hot cream mixture, stir the gelatin mixture. Once it is dissolved, stir in the yogurt. Divide it among ramekins and cover them using a plastic wrap. Refrigerate for 6 hours for the panna cotta to set. Dip the ramekins in warm water and invert onto a serving plate. Garnish the panna cotta with mint and strawberries if you prefer.


Espresso-flavored panna cotta

Ingredients:

Whole milk - 1/2 c
Gelatin - 1 1/2 tsp
Heavy cream - 1 1/2 c
Espresso powder - 1 tsp
Sugar - 1/4 c
Salt - 1 pinch
White and dark chocolate for garnishing - 1 bar each

Preparation: In a small saucepan, pour the milk and sprinkle the gelatin. Let it stand for a few minutes till the gelatin softens. Over medium heat, stir it for 2 minutes for the gelatin to dissolve. Add the espresso powder, sugar, salt and cream. Over low heat, stir it till the sugar dissolves, for about 3 minutes. Take it off heat and cool it. Into 2 martini glasses, pour the cream mixture. Cover it and refrigerate it, stirring every 20 minutes only on the first hour. Chill it for 6 hours. Before serving the panna cotta, grate both the chocolate bars and sprinkle on top of it.

Vietnamese cooking classes at the school of the Wok is ideal if you are a newbie to the kitchen or even a seasoned foodie, learn lots of recipes that are good for the summer. So now when the weather starts (finally) pick up, we thought we'd take a look at one of Vietnam's quintessential snacks: summer rolls.

Summer rolls, also known as goi cuon or Vietnamese spring rolls, different from the more famous Chinese spring rolls they are raw, some bigger and packed to the brim.

They are often filled with raw vegetables and chili, rice vermicelli and herbs like mint and coriander leaves (with the addition of meat or fish are totally optional). They are then usually dipped in salt, fierce or sweet sauces before devouring-perfect food to share with friends and family around the dinner table!

According to Nguyet Pawlyn, school of Wok very-own Vietnamese cooking specialist, is the summer rolls are really fun to make and great for the summer months.

"Summer rolls are very much part of Vietnamese cuisine as it is an interactive experience: all the ingredients are brought to the table, so that each person can make their own, making it to their own tastes. They are very simple to make and so fresh and healthy! "


See below for the school of woks own simple but delicious recipe for summer rolls, perfect for a quick, easy and ultra-healthy meat-free meal anytime of the week. These are extremely versatile and great for experimenting with different flavors ... or just what is left in the freezer!

INGREDIENTS

1 pack Vietnamese rice paper wrappers
Handful of rice vermicelli, soaked in warm water for 3 minutes then drained
3 spring onions, finely sliced
8 dried Chinese mushrooms, soaked in warm water overnight, then coarsely chopped
1 bag of bean sprouts
4 carrots, cut into matchsticks
Handful of mint leaves

The Marinade
2 tbsp light soy sauce
1 tsp sugar
1 tsp sesame oil

Lime Dressing
1 chilli, finely chopped
2 cloves garlic, finely chopped
Juice of 3 limes
3 tbsp honey or Palm sugar
1 tbsp sesame oil
Light soy sauce, to taste

Dress up spring onion, mushrooms, sprouts and carrots lightly with the marinade mixture in a large bowl.

Dip 1 paper cover in a bowl of cold water until it is soft then lay flat on a countertop or plate. Place a small handful of marinated vegetables in the Centre arranged into a small rectangle, leaving space on both sides.

Fold the bottom of the wrapper over the vegetables and dip (dough will be sticky enough to stick to itself). Roll the cover up tightly so it only encloses the filling, fold in sides and stick then continue to roll until completely closed. Repeat with the rest (until you run out of ingredients!).

Mix together the ingredients for the dressing of lime then serve alongside your stack summer rolls.

Rustic Chicken Liver Pâté



People frequently ask me, "What is your favorite thing to make?" This question is tough for me because I like to make whatever inspires me- and that qualifies as just about anything! Fresh, local and seasonal ingredients stimulate my passion for food. Nose to tail cooking and eating does as well. The book The Whole Beast: Nose to Tail Eating by the legendary Fergus Henderson serves as the perfect guide to celebrating the whole animal. 

Some people will look in disgust and wonder, why on earth would somebody ever eat the liver or heart or marrow of an animal? Well my answers to this question are the following:
  1. It is delicious! 
  2. You are respecting the animal and not being wasteful. 
  3. This is what people all over the world are and have been doing since the beginning of time!
  4. I was thinking about this reason while cleaning the raw liver for this pâté. How can most people justify eating the thigh or the breast (or whatever "normal" part of an animal) but not justify the rest of it's parts? By this I mean, if you think about all of the body parts what makes the thigh better to eat then the liver? They are all main body parts that work together. 
So whether you love liver but just haven't tried making it or want to try a new recipe or have never tried liver before in your life, I encourage you to give this pâté a try! 




Ingredients:
1 lb. of chicken livers
2 shallots, finely minced
1 tsp. fresh thyme, minced
1 tbs. fresh parsley, minced
3-4 tbs. of dry red wine, port or cognac
drizzle of olive oil
unsalted butter as needed (about 1 stick in all)
3 tbs. heavy whipping cream
1 tbs. capers (optional)
sea salt 
freshly cracked black pepper
pinch of red pepper flakes (optional)


  1. Wash/rinse the chicken livers. Pat the livers dry by using a paper towel. Trim the livers of any discolored parts or extra veins. Make sure that the livers are all similar in size so cooking time is even. Put aside.
  2. Heat a sauté pan on medium heat. Add enough butter and olive oil to coat the pan. Add the shallots. Season with salt, black pepper and red pepper flakes. Cook the shallots for about 5-6 minutes. 
  3. Next add your alcohol of choice (I went with port) to the shallots. Also add the thyme and parsley. Cook for about 4 minutes or until most of the alcohol has reduced and cooked off. 
  4. Put this mixture into a food processor. 
  5. Add a good amount of butter and/or olive oil to the same-empty pan. Place the liver in the pan (do not crowd the pan) . Season with salt and pepper. Make sure the livers sear on both sides. About 2-7 minutes depending on the thickness of your liver. You  are looking for a nice golden brown on each side and light-pinkish inside. 
  6. Place the liver into the food processor and puree. Then add the cream and two tablespoons of butter. Add capers if you desire. Adjust the seasonings to your liking. Serve the pâté chilled. 
Now, you have a couple of choices to make....

  • Choice #1- Push this finished pâté mixture through a fine mesh. This will make the pâté more mousse-like  and get rid of any grittiness. Or you could leave it the way it is!
  • Choice #2-You could seal the top of the pâté with about 4-5 tbs. of clarified butter or another melted fat or you could choose not to; however, the butter will help to give this pâtè a longer fridge-life. With the butter on top this will last about a month in the fridge where as without the butter, it will last no longer then a week. 


Serve the pâté chilled with good quality crackers and bread and some or all of the following accompaniments. This pâté is best when made ahead so that the flavors can marry and chill. This would be great to serve along with a cheese platter. 

Suggested Accompaniments:
  • Fresh Fruit
  • Cornichons
  • Pickled Veggies
  • Dijion Mustard
  • Drizzle of extra virgin olive oil
